2015 Heather Pinot Noir
I decided to pick the vineyard twice in 2015 as the Pommard clone was a little ahead in ripeness of the 115 clone. By doing so, I was able to ensure the optimal ripeness for both clones and maintain a lovely freshness in the fruit. I then fermented both clones separately in the winery and pressed both to tank. I reintegrated the two wines before racking to barrel and aged the resulting wine for 14 months in neutral French oak barrels.
