Wine Profile
Tasting Notes
Deep Purple color. The wine opens with a sultry blackberry nose mixed with cloves and spice. There are hints of smoke, meat, chocolate and tobacco and a nice violet element keeping the nose from getting too dark. On the palate darker berries show, but also mixed in with redder fruits and violet, which never allow the wine to become too heavy. The finish is long and has elements of chocolate, tobacco and liquorice.

Winemaker Notes
100% of the fruit comes from Richard's Ridge North section of Saralee's Trenton Station vineyard. The fruit was hand harvested on October 20th and brought to the winery where it was destemmed into the half ton fermentation bins. The fruit was allowed to cold soak for 5 days at which point the primary fermentation started on it's native yeasts. Fermentation took 13 days at which point the must was gently pressed. The juice was then allowed to go through ML fermentation in tank and then barrel. The resulting wine was aged for about 14 mo.'s in 100 French oak of which 15% new oak.
