The fruit was handpicked and hand sorted in the vineyard and winery on the 28th of September. The fruit was destemmed and left to cold soak for 6 days after which the must started fermentation on it's native yeasts. The wine was on skins for 21 days and was pressed into tank and then racked to barrel. The wine was aged for 14 months in french oak, 10% new and was bottled in Dec 2013.
