Samantha’s was the first harvest of 2011, on the first day of October. The cooler vintage kept the sugars lower than previous years at just under 25 brix. The fruit was de-stemmed and left to cold soak on skins for 6 days, at which stage the native yeasts started fermentation. The fermentation lasted 8 days and the must was punched down manually twice a day. The must was then pressed to tank where the ML fermentation started. The wine was then racked out of tank to finish ML fermentation in barrel and was aged in French oak for about 14 mo’s with 20% new oak.
